Gravity As An Inverse Cube Law
Today I bring one of my favorite cakes and for me a surprising discovery in his day. And that is the first time I took that test a bit the nose twisted thinking "carrot? You'll see that this is going to know vegetables and not going to like" and my mother, it was delicious!
I love the softness and humidity that gives carrots and sweet but not too much that makes it all gooey cake. The insert also gives a point of very interesting contrast with that little acidity of lemon in my opinion there never should be without.
Hope you like:) kisses to everyone!
Ingredients
225 gr flour 1 teaspoon baking powder 150 gr
brown sugar 50 g white sugar 240 ml oil
3 eggs grated zest of one orange 1
teaspoon cinnamon 1 teaspoon grated ginger 2 large carrots
shredded or ground into a robot
90 g chopped walnuts
For the filling
200 gr cream cheese (can be kind of or mascarpone spread .. the more you like it)
Juice of half lemon powdered sugar 90 gr
Mix sugar, oil and eggs. Add the orange zest, cinnamon and grated ginger.
together flour with baking powder and sift over the previous wet mixture. Stir until well blended.
Add to the mix previously shredded carrots or shredded in a food processor and chopped nuts have also. I like to leave a few to meet them nearly whole course as a gift when you take the cake.
ground for this cake Use a cast of about 18 cm in diameter because I like to be rather high. We spread the mold with butter, flour and pour the mixture.
Preheat oven to 180 degrees and bake for 1 hour to 1 hour and a quarter, proving that is done by inserting a skewer until it comes out clean.
Once out of oven let stand until cool.
While the cake is baked can start preparing the filling. In my case and to make it lighter but you can only use this filling mixture, doubling the quantities of ingredients for the glaze and also cover the entire cake.
Mix cream cheese, lemon juice and sugar. The reserve in the refrigerator.
When the cake has cooled cut it in half and spread with cheese mixture.
